This mushroom is commonly referred to as enoki, but is also known as the golden needle mushroom, winter mushroom, velvet foot, or the velvet stem mushroom.
Enoki mushrooms have a mild, but delightfully fruity flavour and a pleasant crunchy texture.
To prepare Enoki mushrooms cut off the root system; the stems are generally left long. It is not necessary to wash the mushrooms and they are often added uncooked to fresh salads and sandwiches. Enoki are also great when lightly cooked in soups and stir-fries with vegetables and meat. Be cautious not to over-cook them as it can make their stems tough and stringy. Enoki mushrooms will last for about one week with proper refrigeration.
