King Oyster Mushrooms make a healthier, tasty alternative to bacon!
What better way to kick off our featured recipes section of this blog than with MUSHROOM BACON!! When I saw this recipe for shiitake bacon, I thought ‘Oh, I want to try that!’ Don’t get me wrong, I love bacon. I would eat it for breakfast, lunch and dinner if I could so that’s why I was excited to see this healthier, not to mention vegetarian, version of my favorite breakfast meat. The recipe called for shiitake mushrooms, but I thought that King Oysters would also work well and are a great size for bacon slices. To start, I washed both mushrooms and removed the hearty stems of the shiitake before cutting both into thin slices.
Next I mixed together the ingredients for the marinade, I decided to opt in on the optional paprika which added extra depth to the smokiness.
After letting the mushrooms marinate for 60 minutes, I baked them in a 375°F oven for 45 mins turning at least three times.
After letting the strips cool, I tested them out and was astounded by how much they tasted like real bacon! I found that the shiitake bacon tasted the closest to pork bacon, but the King Oyster bacon had a nice, extra earthiness.
So the verdict? If you’re looking for a good substitute to pork bacon, shiitake or King Oyster bacon is a great alternative without sacrificing the flavour!
